At my house we homeschool and there is always room for a fun “school snack”, don’t you think? Especially when you can turn it into a home-ec lesson too! This week my son helped me make these YUMMY Gluten Free Earth Cookies! We even dipped the ends in white chocolate for the polar ice caps. LOL

This recipe is actually a great gluten free slice and back sugar cookie that we colored to make it look like earth. Since I am not gluten free all the time I can tell you that this reminds me of those good buttery short bread cookies that you can buy packaged at the grocery store that go amazing with a cup of coffee. These Earth Cookies may have disappeared really quickly!

We made the cookie dough, removed it from the mixer, and worked it into a ball. We then cut it in half and returned half of the dough to the mixer with a few drops of blue food coloring. You could do this by hand but the mixer is so much faster. We then removed the blue dough and did the same with the other half and green food coloring.

To make our dough manageable we took half of the green dough and half of the blue dough and rolled it out into logs.

Next we took the green and blue and rolled them together. This obviously makes it half blue and green, but since we wanted a planet effect we folded the dough over on itself making a shorter roll of dough and doubling the colors.  We gave and a twist and a roll to smooth it out, finally wrapping it in parchment paper and refrigerating it over night.

Get the recipe!Do the same with the other half of the dough to create a second roll. You will want to make sure the dough rolls are chilled for at least 4 hours before cutting and baking.

When you are ready to bake slice the dough into 1/2 inch – 3/4 inch thick pieces and place on a parchment lined baking sheet. Bake at 350 for 8 – 10 minutes or until the edges just start to brown.

You can eat them just the way they are or melt some white chocolate and dip the polar caps. We are all about dipping things in white chocolate lately since we found these dairy free white chocolate coins on amazon! They are so good!

Gluten Free Earth Cookies

Gluten Free Earth Cookies

Ingredients

  • ¾ cup unsalted butter, softened (or dairy free margarine)
  • ⅔ cup packed light brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups gluten free flour mix
  • ¼ teaspoon salt
  • 8-10 drops blue food coloring
  • 8-10 drops green food coloring
  • white chocolate (optional)

Instructions

  1. In your mixer beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the brown sugar and beat on medium-high speed until fluffy and creamy.
  2. Next beat in egg and vanilla extracts on high speed, scraping down the sides and bottom of the bowl as needed, and continue to beat until fully combined.
  3. Mix the flour and salt on medium speed until fully combined. The cookie dough will be thick and slightly sticky. Turn the dough out onto a floured work surface and work into a ball. Cut the ball in half and place one-half back into the mixer with blue food coloring mix just until the color is evenly distributed. Remove from mixer and do the same with the other half and the green food coloring.
  4. Divide the green and blue dough in half. Take each half and form it into an 8-inch log and then roll them together to form a unified log about an 8-inch log, about 2.5 inches in diameter.
  5. Tightly wrap the logs in plastic wrap or parchment paper and chill in the refrigerator for at least 4 hours and up to 4 days.
  6. When ready to bake preheat oven to 350°F.
  7. Line two large baking sheets with parchment paper. Set aside.
  8. Remove logs from the refrigerator, slice each log into about 12 equally thick cookies and place on baking sheets about 2 inches apart. Bake the cookies for 10-12 minutes or until brown around the edges. Allow to cool for 5 minutes on the cookie sheet, then transfer to cooling rack to cool completely.

Optional

  1. Melt the chopped white chocolate in a double boiler. Dip each completely cooled cookie into the chocolate to create the polar caps. Place on a parchment lined cookie sheet for the chocolate to set. Enjoy

Notes

I used the Aldi brand gluten free baking mix for this recipe. You can use any gluten-free flour mix that you have had success with.
